The
casks for seasoning are indispensable instruments for the Traditional
of Modena and Reggio Em., whilst for the Balsamico di Modena their
utilization is limited to the production of the most refined vinegars.
For the benefit of interested parties, the characteristics are outlined
herebelow. As anticipated above, procedure for the production of
Balsamico involves casks as natural laboratories for the three fundamental
stages of acetification, maturation and ageing. They are ordinarily
shaped like barrels, with spherical extremities and fuller lines
along the staves. In the past casks more elliptically shaped were
used, as they were commonly transported on horseback . In the course
of centuries it was determined that different types of wood contribute
varied advantages to the optimization process of Balsamico. Authocthonous
essences easily available in areas of production have always been
used; the fact that at least as many other types of wood are not
adopted shows that nothing has been left to chance and that on the
contrary selection rests on definite checks made and objective advantages
verified.
