IL
BALSAMICO
Balsamic
vinegar is a condiment. Its characteristics are a dark amber,
bright colour, an intense flavour and a bitter-sweet taste. Such
qualities acquire more and more refined heights as the Balsamico
improves thanks to its permanence in the ageing casks made of
the most precious woods, as is in the process of Tradizionale.
Through the years, the flavours of the different woods are capable
of transferring to the mix of the basic elements, simmered must
and wine vinegar, those extraordinary smell and taste sensations
that make this delicacy unique and extremely sought-after..
Balsamico
is produced in several ways and with systems which cannot be confused:
Balsamic Vinegar of Modena is the type most widely
consumed, making up most of the total production. Every producer
proudly boasts individual characteristics and methods.
Traditional Balsamic Vinegar of Modena
is the rarest and most expensive. Its great value comes from the
pluridecennial refinement procedure in small casks permitting only
very modest drawings.
Traditional Balsamic Vinegar of Reggio
Emilia : may be equivalent to the Traditional Balsamic of Modena,
but its production area is the province of Reggio Emilia.
